Most of us are probably familiar with English Muffin Pizzas, right? Well my Father-in-law is retired and pursues farming in Southern Japan. He frequently sends us the fruits (and vegetables ) of his labor. The latest shipment contained several bags of large shitake mushrooms. There are several ways to cook shitakes but this is my favorite.
What You will need:
Black Pepper
English Muffins
Mayonaise
Olive Oil
Oregano
Shitake Mushrooms
Sliced American Cheese*
Tomato
Knife + Cutting Surface
Frying Pan (with lid)*
Toaster or Toaster Oven
Spatula
* Items with an asterisk are recommended but close substitutes can be used ( oil, cheese).

1. Wash your hands.
2. Cut stems off the mushrooms.
3. Put a dollop of mayonnaise on the spore side of the shroom
4. Add a dash of black pepper.
5. Heat pan and add 1-2 tablespoons of cooking oil adjust heat to medium/ high
6. Put shitakes, spore/ mayo side down in the pan.
(A lid on the pan is suggested because the steam prevents the oil from evaporating quickly and burning)
7. Wait a couple of minutes, remove lid and apply press the mushrooms down with spatula until you hear
a sizzling sound.
8. Reduce flame to medium low, and flip them over.
9. Add Tomato slice(s).
10. Add slice(s) of cheese of your choice, I prefer yellow american in this case.
11. Put lid back on the pan.
12. Turn off heat and leave the lid on while you toast english muffin(s)
13.Wash your hands again.
14.Using the spatula, remove item from pan, carefully placing each on a toasted english muffin.
15. Cut in Half, then cut each half in half.
(Each toasted side of the english muffin will eventually hold one shitake, and be cut into four pieces)
16. Sprinkle with oregano and garnish with snack chips.
I used lightly salted Humawaru snacks.
